Hello job, g’bye time!
Wow, it’s hard to believe that it’s been a month already. On the 13th of October I got an interview for a maternity-leave replacement position, then started the very next day. I guess this means the interview went well? Since then everything has been a blur. My car’s a month and a half overdue for its annual check, and things are starting to pile up at home again since I seem to again have no more time. *sigh*
I’m hoping that I’ll have a bit more mental (and physical) energy now that I’m not being quite as overwhelmed by an inundation of information in a remarkably short period of time. Things are actually starting to make sense. My brain doesn’t hurt all the time anymore.
I was able to find an awesome recipe that makes a week’s worth of meals for about $20 and an hour’s investment of time. I used both cheddar and blue cheese, but next time I’d use ground sausage meat instead of the chunks; the chunks were just too disturbingly abrupt in the general milieu of the rest of the casserole:
The ground sausage meat worked MUCH better the 2nd time around. I also used frozen spinach, which was just as good as fresh. Once it’s all cooked down together, who’d notice, right?
